Custom Document Permissions for a Process

I have a custom workflow based off the Service Request template and it's working well. One question I have is, is it possible to customize the document permissions so that only some users can view attached documents?

The idea is that many people will view the process itself to complete their tasks, but only a certain group will see documents that may be sensitive.
